L.A. is being flooded with old school cocktail bars.  I’m pleased to say they all keep getting better and better.  The decision sometimes becomes difficult.  Oldfields’s Liquor Room makes it an easy choice.  Much like menswear, doing things the long, hard and sometimes stupid way makes for a higher quality product.  I know for fact these dudes go in two plus hours before someone has their first cocktail to make everything in house.  The process is in the glass.

Shaker or Stirred? When to shake  a cocktail:  When a drink has Dairy, Citrus or Sugar.  Shaking adds air, ice and water to a cocktail giving it a crisp and effervescent texture. When to stir:  When the ingredients are more delicate and should be tasted entirely.  Example: Manhattan, Old Fashion or Gin Martinis.

When fall comes I love a good cocktail with egg whites.  Seriously, I said egg whites.  Egg whites are that one ingredient that your bartender is using and you’re not, that’s why your drinks aren’t as good.  The basics behind “sour” drinks are the same templates for Margaritas, Sidecars and Gin Fizzes.  Plus I love Chris McMillan videos, he’s a real bartender and not a pretentious mixologist.

I want to open my own bar just so I can make all the bartenders wear this behind the bar.  That would be some phenomenal, next level bartending game right there!  This stuff keeps me up at night sometimes.
